Autumn Raspberries have an amazing depth of flavour and are even more fragrant than the summer raspberries. If you like raspberries you will love these!

If you can stop yourself eating them all then Raspberries are ideal for freezing.
Simply wash them gently – by putting them in a sieve or colander and swirling them in a bowl of cold water and allow to drain. Then place the raspberries in a single layer on a baking tray lined with baking parchment and put them in the freezer for between 4 hours to a day. (Any longer uncovered and they will get freezer burn) This method means the raspberries do not freeze together in a big clump and you will be able to have as many or as few as you want from the freezer. Once the raspberries have frozen take them off the baking tray and put them into a freezer bag – they will keep in the freezer for 12 months.
